Healthy Camping Breakfast Tacos

 Spice up your early morning hikes with some healthy camping breakfast tacos! 


  • 4-6 eggs
  • 1 large bell pepper
  • 1 small yellow onion
  • 1 jalapeño
  • 1 cup shredded cheddar cheese 
  • Butter coating the pan
  • 4 small tortillas 


  1. Cut the bell pepper and onion into thin strips
  2. Heat a cast-iron pan over medium heat on your camp stove. Add 1 TBS ghee to the pan and then add in the pepper and onion strips. Cook for about 5 minutes stirring occasionally
  3. Add jalapeño to the pan with the peppers and onions. Cook for 3-5 more minutes until the onion becomes translucent
  4. While the peppers and onions are cooking, scramble the eggs in a separate bowl. Add in a pinch of salt and pepper
  5. Place the cooked peppers and onions in a separate bowl. In the cast iron pan, add a little more ghee and then add your scrambled eggs. Cook the eggs
  6. While the eggs are cooking, slice up your cheese and any other toppings you want
  7. When eggs are cooked, place them in a separate bowl and warm the tortillas in the hot pan
