Healthy Camping Breakfast Tacos
Spice up your early morning hikes with some healthy camping breakfast tacos!
Ingredients
- 4-6 eggs
- 1 large bell pepper
- 1 small yellow onion
- 1 jalapeño
- 1 cup shredded cheddar cheese
- Butter coating the pan
- 4 small tortillas
Instructions
- Cut the bell pepper and onion into thin strips
- Heat a cast-iron pan over medium heat on your camp stove. Add 1 TBS ghee to the pan and then add in the pepper and onion strips. Cook for about 5 minutes stirring occasionally
- Add jalapeño to the pan with the peppers and onions. Cook for 3-5 more minutes until the onion becomes translucent
- While the peppers and onions are cooking, scramble the eggs in a separate bowl. Add in a pinch of salt and pepper
- Place the cooked peppers and onions in a separate bowl. In the cast iron pan, add a little more ghee and then add your scrambled eggs. Cook the eggs
- While the eggs are cooking, slice up your cheese and any other toppings you want
- When eggs are cooked, place them in a separate bowl and warm the tortillas in the hot pan
